Ijalba Blanco Genoli
Ijalba Blanco Genoli is a dry white wine with Denominación de Origen Rioja, made with 90% Viura grapes, cultivated organically in the winery’s own vineyards. No chemical fertilisers, phytosanitary products of herbicides are used. Bodegas Viña Ijalba was founded by Dionisio Ruiz Ijalba in 1991, although he has been since 1975 transforming the land into vineyards, as at first it was not very suitable for agricultural purposes, since it was a former quarry. Nowadays, the company is owned by the second generation.
How it is made
The grapes are harvested from vineyards with moderate sunshine, where they get to develop a good balance. Maceration takes place at low temperatures. Then a gentle cold pneumatic pressing is carried out, and the must is racked in narrow concrete tanks lined with epoxy. The wine ferments in stainless steel tanks at a controlled temperature of 15ºC.
Pale golden colour. Fruit and citrus aromas with notes of apple and flowers. Fresh and smooth on the palate with a good acidity. Best served at a temperature of 8º C with appetizers, fish and carpaccio. 12,5% ABV.
